To produce Fiano di Avellino “Pietracalda” Feudi di San Gregorio careful selection took place prior to fermentation in stainless steel tanks at controlled temperatures of between 16 to 18°C.
This helped to capture all the purity of fruit and varietal characteristics of the Fiano variety.
Fiano di Avellino “Pietracalda” Feudi di San Gregorio was then matured for four to five months on its lees, with frequent bâtonnage for a greater texture and complexity.
